Low-Cost Vegan Sausage
Homemade budget-friendly vegan sausage made with textured soy protein, onion, garlic, smoked paprika, cumin, smoke powder and beetroot for color. It firms up best after cooling and chilling.

Hydrate the textured soy protein and drain well, removing excess water.

Sauté half the onion with the garlic and keep the other half raw, finely diced.

Process the soy protein with sautéed onion, garlic, salt, smoked paprika, cumin, smoke powder, olive oil, cornstarch, flour and beetroot until moldable.

Mix in the raw diced onion for texture.

Shape the sausages, pressing firmly so they are compact and even.

Bake in an air fryer until firm and lightly browned.

Let cool and chill before unmolding or handling, as the starch firms after cooling.

Reheat or brown gently before serving.
